TWD- Fresh Mango Bread

This week was chosen by Kelly of Baking with the Boys. It was a great choice. I had never heard of mango bread, and really didn't know what to expect. I have to say that I really couldn't taste the mango. Only if I ate a piece of mango, could I taste it. And even then, it was really mild. Did you know that cooked mango gets kind of stringy? I didn't. Now, I know..for whatever reason I may need to know that. Anyways.....

This bread was very moist, and flavorful of the spices. It would be great with a spread of cream cheese on it! Next up with TWD, Chipster topped Brownies!

Your bread looks great. Its the first time I've ever heard of mango bread. With the abundance of mangoes here in India, I'm thinking I should try this. What do you say? Was it good?

Yum! Stingy huh, had no idea. Should be interesting when I make mine tonight ;)

Stringy is not a good thought when it comes to baked goods. Cheese, yes but bread - no.

I'm sorry that you couldn't really taste the mango flavor. I wonder if making the bread with mango puree or reduced mango juice would make for a similarly delicious but also mango-tasting bread? Either way, the bread looks fabulous! What is it about mangoes being stringy?!
