TWD-Fluted Polenta and Ricotta Cake





This weeks TWD recipe was chosen by Caitlin of Engineer Baker. To be honest, I did not want to make this cake. First, you can't find polenta in the regular grocery store here, and using yellow cornmeal did not appeal to me. It made me think of sweet cornbread, and I am not a fan of it either. Secondly, I am not a big fan of fig newtons. So, not really knowing what I was getting into was a little scary.


The recipe was easy to follow and easy to mix together, baked in the time that the recipe called for and viola...I have a fig/cornmeal/ricotta cake. My first bite...tasted like sweet cornbread. The next bite, tasted a little better. So on, and so on. I did decide that I did like the crunch of the fig seeds, and I really thought that I wouldn't. That is probably the only thing that I can say that I liked about this cake. That is part of being a part of the TWD chicks, baking new things, out of my comfort zone, knowing that I am not going to like everything that is chosen. This recipe was one of those, but I am glad that I did make it.

Same here - good for you for making it - something like that cake would never have appealed to me, but I'm so glad I tried it. Nice job!

You should try strawberries in this cake instead of figs, they were sooo yummy!

I agree with everything you wrote. I am not a fan of cornbread or figs BUT I could dig the "cake" in small doses sans fig. Great job!

I think it's awesome that you tried it even though you weren't an immediate fan of the recipe. Stretching your chops like that makes you such a better baker. I bet you feel a lot mroe confident about your skillz now that you've done it! It sure looks great~

This was out of my comfort zone too. I didn't have great success with it. I was hoping for something that tasted more like fig newtons. I do love the crunch of fig seeds for some reason.

It definitely reminds me of sweet cornbread as well. I think adding more fruit might help - not that it matters, because I don't plan on making this one again either.

I also had doubts about the cake - almost didn't post.It's a sort of cross between a tart and a cake. It's good that we did make it though.

I'm glad that you went ahead and made the cake! Great job! I'm sorry it wasn't completely to your liking, though. I had my misgivings as well, but I'm now a fan of the cake.
